Dried Fruit Compote in Port Wine

Ingredients

1/2 cup water 125 mL
3/4 cup Port wine 190 mL
1/4 tsp ground cinnamon 1 g
1 tsp gingerroot, grated 4 g
8 dried figs 1/2 cup
8 dried apricots 1/3 cup
2 tbsp raisins 20 g
8 pitted prunes 1/4 cup

Method

  1. Combine the water, Port wine, cinnamon, and ginger in a saucepan. Bring to boil over high heat, then add the fruits.
  2. Reduce the heat to medium, cover and simmer, stirring occasionally, until the fruits are tender and the syrup thickens slightly, about 30 minutes.
  3. Transfer the compote to a bowl, cover and chill at least 4 hours, up to 1 day.
