A classic French dish, but I've omitted the lard to make it healthier.

Very nice dish. I didn't have any 'herbes de provence' but I googled it and just tossed in what ingredients I had on hand. Worked great. We will for sure make this again.
I made this with deer meat and it turned out wonderful. Very simple lovely taste. I didn't even cut it up just left it on the bone. I served it with noodles and added a 1 1/2 tbsp of cornstarch to 1/4 cup cold water then in the juices to thicken it up. This meal is great with homemade pickles too.
