Ingredients

1/4 cup lime juice, freshly squeezed 2 limes
2 tsp gelatin 4 g
2 mangoes 600 g
2/3 cup evaporated milk powder 70 g
4 tbsp sugar 50 g
1/3 cup grated coconut [optional] 28 g
18 leaves fresh mint [optional] 1 g

Before you start

A blender or food processor will be very useful for this recipe.

Method

  1. In a small saucepan, combine the lime juice and the gelatine. Place the pan over low heat and stir until the gelatine dissolves, 1-2 minutes. Pour the mixture into the jar of a blender or food processor.
  2. Peel the mangoes and cut the flesh from the pits. Add the flesh to the blender. Add the sugar and process until smooth, then pour the mango purée into a bowl.
  3. Fold in the evaporated milk powder and combine well until no white streaks remain.
  4. Portion out the purée into small bowls. Cover and chill in the refrigerator until set, about 5 hours.
  5. Just before serving, you may sprinkle the grated coconut over the mousse surface and garnish each bowl with mint leaves. Serve.

Observations

The mousse will keep up to 3 days in the refrigerator.

This was excellent and healthy. I do not understand why previous reviewer says "it is far richer than you think": there is not fat at all in this recipe!

I will try this again, I recommend using very ripe mango - the fruit I had was not ripe enough to blend smoothly. Next time, I'll wait until it is good and ripe before I make this.

If you are allergic to beef (including gelatin), you can use Agar Agar Flakes as a substitute
