Baked Sweet Potatoes with Rosemary

Ingredients

4 sweet potatoes, diced into 1,5 cm pieces 700 g
2 cloves garlic, minced
2 tbsp olive oil 30 mL
2 sprigs rosemary, fresh 10 g
3 1/2 tsp pine nuts [optional] 8 g
1 pinch salt [optional] 0.2 g
ground pepper to taste [optional]

Method

  1. Preheat the oven to 190ºC/375ºF.
  2. Peel and coarsely dice the sweet potatoes (1,5 cm). Mince the garlic. Place the potatoes with garlic on a generously oiled baking sheet. Turn them to coat thoroughly with oil. Add the rosemary leaves and the pine nuts (optional). Add salt and pepper.
  3. Bake for 25-30 min, turning the potatoes occasionally, until they are soft.
  4. Serve.

These were really good. I am not a fan of potatoes but my "better half" had been bugging me that he needed potatoes - so I conceded and made these. Well, they were so good that we were fighting over who got to have the leftovers....I won.;)

Given the fact sweet potatoes are good for you and they tasted pretty good - I might make these again. Didn't use pine nuts (too expensive) and didn't use fresh Rosemary as I usually end up wasting a package of fresh herbs when it calls for "1 sprig" - used dried Rosemary instead.
