This is a typical recipe from Northern Italy. This dish, which combines asparagus, egg and parmesan, is also called “Bismarck Asparagus”. Indeed, it seems that the German Chancellor used to add a fried egg to all dishes, and that is how the Milanese were inspired for their recipe.
