Barley is an excellent source of soluble fiber, primarily beta-glucans, which are fermented in the gut and act as prebiotics.
Like barley, oats, and oat bran in particular, are an excellent source of soluble fiber in the form of beta-glucans. Oatmeal for breakfast will help you start your day off right!
At the top of this list, is psyllium, which is an exceptional source of soluble fiber (up to 85% of its weight). It can be used as a thickener, for example in gluten-free breads and desserts to give them a softer texture.
