A light and airy baked dish of eggs and blue cheese. Yes, I know, soufflés are worrisome because they are hardly ever a success; but this one works every time.
Also known as “crema catalana”, it is a chilled custard base topped with a caramelized sugar topping. To break its crust with a spoon is such a pleasure!
Quiche with roasted peppers and sun-dried tomatoes, with no crust to make it easier and quicker to do… but no less tasty!
