Watermelon and Arugula Salad with Goat-Cheese

Ingredients

1 bunch arugula, washed and drained 150 g
1 tbsp Classic Vinaigrette 15 mL
1 pinch salt [optional] 0.2 g
ground pepper to taste [optional]
700 g watermelon, cut into cubes
90 g goat cheese

Method

  1. Wash the arugula carefully to remove any sand, then spin or blot dry and put in a bowl. Pour in the Classic Vinaigrette, add salt and pepper, then toss well. Distribute the arugula on the individual serving plates.
  2. Cut the watermelon into cubes and arrange them on the arugula bed. Add a fair amount of freshly ground pepper. Cut the goat-cheese into slices and arrange them on the plates. Serve.

the sharpness of the vinegrette and creamyness of the goat cheese go really well with the sweet melon. I made this for myself as a late afternoon tide me over to a late supper. I would make it again but probably not for my kids.

I was so happy to find a salad that my kids liked!!! I used mesclun mix instead of arugula because I thought my kids would find it too bitter. It was soooo good! My son does not like tomatoes so watermelon is a great juicy substitute! Of course, I'm a sucker for goat cheese and it was good.
