Ingredients

2 1/2 cups berry mix, frozen 300 g
2 tsp lemon juice, freshly squeezed 1/4 lemon
1/3 cup icing/confectioners' sugar 45 g
1 egg whites 2 tbsp

Before you start

A blender or food processor will be very useful for this recipe.

Method

  1. Put the frozen berries in a blender. Add the lemon juice and icing sugar, then mix at maximum speed. With the blender running, pour in the egg whites and continue to mix until homogeneous.
  2. Transfer the mixture to a container, cover and chill in the freezer for at least 1 h before serving.
  3. Garnish with a few berries and serve.

The kids LOVED this recipe... I will be stocking up on frozen berries and fruit the next time it goes on sale because this is going to be a staple in our home. Thanks for another great recipe!

Okay, there are a lot of things that don't work with this recipe: - The measurements in Imperial (cups) don't match the metric amounts; I had to phone SOS Cuisine to ask which measurements I was to go by, and the recipe developer said to use the Metric measurements - Unless you have an incredibly powerful blender (and mine is a Cuisinart which is pretty good!), the frozen fruit must defrost for AT LEAST 30 minutes before it can be blended with the other ingredients. I had to let it defrost for 45 minutes - The recipe says to blend the berries, lemon juice, and icing sugar "until homogenous." What does that mean?! When I poured it--yes, poured!--the mixture into the container for freezing, it looked like a smoothie. - As per both the French and English reviews, I allowed the sorbet to thaw for 35 minutes before I served it. It had turned completely icy and tasted as if I was chewing on an ice cube that happened to be berry-coloured. This was not a delicious recipe at all! The only reason I gave it even 1 star is because it wasn't the most difficult concoction to make. Other than that, there are so many wonderful (better-tasting!) sorbets that can be bought. Buy something delicious instead!

Wonderful recipe. Came together as written with just a little coaxing in a food processor. I expect I'll make this often in the summer when I can freeze berries myself as they are expensive to buy frozen.
