Mixed Greens with Sun-Dried Tomatoes

Ingredients

1/2 red onions 80 g
8 cups mixed greens 200 g
2 tbsp extra virgin olive oil 30 mL
2 tbsp lemon juice, freshly squeezed 3/4 lemon
1 tsp Dijon mustard 5 g
1 pinch salt [optional] 0.2 g
ground pepper to taste [optional]
2 sun-dried tomatoes (oil packed) 8 g
20 g feta cheese, light, crumbled

Method

  1. Thinly slice the onion, then soak it in a small bowl, filled with water and a few drops of vinegar. Set aside 30 min or leave it overnight in the refrigerator. This makes the raw onion easier to digest and crispier.
  2. Wash and dry the mixed greens, then arrange on a serving plate. Add the drained onion, sun-dried tomatoes and crumbled feta cheese.
  3. Pour the oil, lemon juice and mustard into a small bowl. Season with salt and pepper to taste then whisk to emulsify the vinaigrette. Pour it over the mixed greens and serve.
