Ingredients

1 can (400 mL size) canned peaches (with syrup)
1 tbsp whipping cream 35% 15 mL
1 tsp lemon juice, freshly squeezed 1/4 lemon
2 tbsp pistachios, shelled, unsalted 16 g

Method

  1. Take the peaches out of the can, drain them, reserving the syrup then set them aside.
  2. Pour the peach syrup in a pan and reduce over medium heat 6-7 min until it is lightly caramelized and golden-coloured. Add the peaches to the pan and cook 2-3 min, then add the cream and lemon juice. Cook an additional 1-2 min. Let the peaches and syrup cool down a few minutes, then transfer all to a bowl, cover and chill in the refrigerator at least 1 hour before serving.
  3. Spoon the peaches into cups, sprinkle the pistachios on top, and serve.

This was very yummy. I did use peaches in a 'light' syrup, which clearly wasn't thick enough as it took quite a while to reduce, and I added some sugar to help it caramelize. End result was very yummy though.

cream + lemon = curdles.... I didn't enjoy this at all. :(

Poor directions resulted in very little "carmelization", not too great overall. And certainly not a good use of ingredients!
